Abstract
PROCESSO PARA PRODUZIR AMIDO, PRODUTO DE AMIDO E PRODUTO ALIMENTÍCIO. Processo para produzir um amido compreendendo: tratar umamido alimentado que compreende amilopectina com glucanotransferase para produzir um amido de cadeia estendida; e tratar o amido de cadeia estendida com uma enzima de desramificaçâo para produzir um produto de amido que compreende fragmentos de amilose. Pelo menos cerca de 38% em peso dos fragmentos de amilose tem um grau de polimerização (DP) de pelo menos cerca de 35.
