O USO DE ESTERÓIS-ESTERES PREPARADOS A PARTIR DO ÓLEO DE SOJA NO DESENVOLVIMENTO E PREPARAÇÃO DE ALIMENTOS FUNCIONAIS. A presente invenção refere-se ao uso de ésteres de esteróis, a partir do óleo de soja, pela reação de triglicerídeos de origem vegetal e animal, com a mistura de esteróis obtida do material resultante do processo de refino do óleo de soja. Os ásteres graxos obtidos apresentam larga aplicação na indústria alimentícia como redutores dos níveis de colesterol plasmático e podem ser usados puros em diversas formulações ou adicionados a alimentos, margarinas, gorduras e óleos comestíveis.
