Abstract
"USO DE UM LICOPENO REVESTIDO COM UMA FINA PELÍCULA INSOLÚVEL EM ÁGUA E PROCESSO PARA SUA PREPARAÇÃO". A presente invenção descreve o uso de um licopeno revestido com uma fina película insolúvel em água, compreendendo polímero de proteína anfifílica para colorir com coloração vermelha, alimentos, fármacos ou cosméticos com teores de gordura e/ou óleo superiores a 5%. A invenção descreve ainda um processo para preparação de formulação de licopeno estável compreendendo: (a) tratar uma proteína isolada para formar uma proteína numa forma molecular; (b) dispersar licopeno numa solução aquosa compreendendo uma proteína isolada numa forma molecular; (c) triturar dita dispersão para formar tamanho de partícula de licopeno de 1 a 10 m formando uma mistura homogeneizada compreendendo partículas finas e opcionalmente (d) secar a mistura homogeneizada.
