Abstract
"PRODUTO CONGELADO". Um produto congelado compreende um cartucho que contém confeito aerado congelado que possui aumento de volume de mais de 20% e menos de 100% e que contém menos de 1,5% p/p de glicerol, redutores do ponto de congelamento em quantidade de 25% a 37% p/p e de 2% a 12% de gordura, em que os redutores do ponto de congelamento possuem peso molecular numérico médio ~ n~ de menos de 300. O confeito aerado congelado possui estrutura mole e pode ser extrudado do cartucho a -18 C.
