Abstract

"PROCESSO PARA OBTER CONCENTRADOS DE SÓLIDOS E LÍQUIDOS DE LEGUMES, FRUTAS E CARNES". Diferência-se dos processos convencionais por empregar a Radiação Térmica, indiretamente sobre uma caixa ou equivalente, sobre pressão a temperatura variável até 102 C. empregando o tempo de 15 a 25 minutos, para obter simultaneamente um concentrado sólido e liquido e ainda eliminar o exceso de água ou lipidios, conforme o produto processado Para fabricar alimentos diéticos, doces, sucos, sorvetes refrigerantes, conservas de carne e peixes e iustria em geral.
