Abstract
"APARELHO E MÉTODO PARA FORMAR SALSICHAS SEM INVÓLUCRO". Um método e aparelho para formar uma emulsão ou massa mole protéica em um produto alimentício formatado sem o uso de um invólucro. Um suprimento adequado de emulsão (50) é fornecido e transportado sob pressão em um tubo de enchimento oco alongado (20) para formar uma emulsão formatada de comprimento contínuo. Depois disto, a emulsão formatada é direcionada em um tubo de moldagem (70) que é deslizantemente montado em torno do dito tubo de enchimento. Um fluido de tratamento de um suprimento (60) é direcionado para a superfície interior do tubo de enchimento para umedecer continuamente o interior do tubo de moldagem e desse modo formar uma pele protéica em torno da emulsão formatada.
