Abstract

"DISPOSIÇÃO INTRODUZIDA EM TÚNEL DE RESFRIAMENTO". Consiste em resfriar recipientes que contém alimentos, a fim de que possam criar vácuo e serem passíveis de manuseio para armazenamento. Este procedimento se dá através de um túnel de resfriamento que pulveriza água nebulizada em dois estágios. O primeiro, para dar início na criação do vácuo dentro do recipiente, faz um pré-resfriamento por choque térmico (65 C). No segundo estágio, os envases são novamente banhados à uma temperatura inferior (30 C) que ofereça segurança ao manuseio e armazenamento. A concepção construtiva deste equipamento permite a adição de novos módulos, com o auxílio de uma junta de acoplamento.
