Abstract

FORNO DE IMPACTO COM JATOS FOCALIZADOS E DIFUSOS. Um forno de impacto provê uma mistura de jatos focalizados e jatos de fluxo difuso para produzir um equilíbrio entre o cozimento em alta velocidade e o aquecimento uniforme da superfície do alimento, sem a necessidade de mover o alimento durante o processo de cozimento. Uma combinação de jatos focalizados, provendo fluxo de ar focalizado em alta velocidade para o cozimento por impacto, intercalados com jatos difusos, provendo fluxo disperso, pode interagir com os jatos focalizados para moderar o efeito dos jatos focalizados próximos à superfície do alimento.
