Abstract

PROCESSO PARA RECUPERAR UMA COMPOSIÇÃO PROTEICA, E, COMPOSIÇÃO PROTEICA. Uma fração proteica e uma fração de gordura estável frente à oxidação são recuperadas da carne de ave contendo gordura, osso e proteína. A carne de ave é cominuída, solubilizada com ácido ou base de grau alimentar para formar uma fração proteica líquida e uma fração de gordura solida. A proteína na fração líquida é precipitada e o produto proteico retém a cor de carne crua.
