Abstract
A perda de sabor que ocorre depois que um pedaço cortado de fruta ou legume fresco é preservado com ascorbato de cálcio e armazenado em seguida é solucionada com adição de substâncias que aumentam o sabor ao pedaço cortado de fruta ou legume, junto com o ascorbato de cálcio. Os tipos e quantidades de substâncias que aumentam o sabor são selecionados paraapenas compensar essa perda de sabor e não introduzir nenhuma nota de sabor nova e estranha à fruta ou legume.
