Abstract
A presente invenção refere-se a uma composição compreendendo gotículas hidrofóbicas revestidas por uma cobertura e dispersas em uma matriz e um produto consumível compreendendo a composição. As gotículas hidrofóbicas compreendem um composto hidro-fóbico, a cobertura compreende uma proteína irreversivelmente desnaturada e a matriz compreende uma proteína, um amido e um polissacarídeo. São também providos métodos para preparação da composição e do produto consumível.
