Esta invenção diz respeito a um processo para preparar um alimento lÃquido concentrado compreendendo tratar uma solução ou um concentrado ou um extrato de açúcar com um Brix maior que 20 °, com carboidrato oxidase e catalase sem ajustar o pH antes ou durante o tratamento, pela adição de substâncias de tamponamento ou substâncias básicas, para obter um alimento lÃquido concentrado, em que o pH final é menor que 3.
