BETA GLUCANA DE LEVEDURA COMO AGENTE CRIOPROTETOR DE CULTURAS PROBIÓTICAS. A presente invenção trata-se do emprego de beta glucana (ou ß-glucana) de levedura como agente crioprotetor de culturas probióticas. Mais especificamente, compreende a aplicação de ß-glucana de levedura descartada em cervejarias como agente protetor de culturas probióticas com intenção de manter sua viabilidade durante o processo de liofilização, se estendendo também para proteção durante o armazenamento refrigerado e quando expostas à digestão gastrintestinal.
