GABINETE CLIMATIZADO PARA DESCANSO DE PRODUTOS ALIMENTÍCIOS EM FERMENTAÇÃO. O gabinete climatizado (10) compreende uma câmara de ventilação (30) tendo uma abertura inferior (31) e duas aberturas laterais (32) e alojando uma ventoinha (40) que produz um fluxo de ar de retorno (FR) do ambiente interno (AI) do gabinete para o interior da câmara de ventilação (30), e ainda fluxos de ar forçado (FA) dirigidos a respectivas saídas laterais (32), em cada uma das quais é posicionado um aquecedor elétrico (50), pelo qual é passado e aquecido um respectivo fluxo de ar forçado (FA) que é encaminhado a um duto descendente (60), definido junto à face interna de cada parede lateral (10d) do gabinete climatizado (10) e provido de janelas (61) dispostas ao longo da altura do ambiente interno (AI) do gabinete climatizado (10).
