A presente invenção refere-se a um processo para redução do teor de sacarose em soluções aquosas, como o suco de laranja, utilizando nanopartículas magnéticas revestidas com material inerte (SiO2) e com uma enzima invertase imobilizada em sua superfície. O processo desenvolvido pela presente invenção permite a disponibilização de produtos com baixo valor calórico para consumo da população.
