Abstract

É descrito um processo para fritura de alimento à base de farinha de trigo com recheio contendo em sua formulação uma quantidade específica de farinha de trigo, ovos, sal, açúcar e fermento que, associado a temperatura do óleo de fritura e ao tempo e forma de fritura, conforma uma casca espessa que impede a absorção de gordura ao mesmo tempo em que conforma poros na massa que garante o cozimento homogêneo da parte interna do alimento.
