Abstract
"PROCESSO PARA O PREPARO INDUSTRIAL DE ARROZ COZIDO A VÁCUO". De acordo com o qual o arroz é limpo por decantação (1), utilizando uma ducha de água fria, sendo mais tarde realizada uma escaldadura (2) com água quente, depois um resfriamento (3) por meio de uma ducha com água refrigerada, uma posterior drenagem e secagem (4) com ar microfiltrado, seguindo-se a fritura (5), pulverizando-se o arroz com óleo em alta temperatura, mistura (6) com os molhos e sólidos correspondentes, continuando com o empacotamento (7) a vácuo e depois um período de maceração, concluindo com o cozimento e a esterilização realizados numa autoclave giratória.
