Abstract
"PROCESSO PARA CONVERTER FITATO EM FOSFATO INORGÂNICO" . A presente invenção se refere a um processo para conversão de fitato presente em um alimento em um fosfato inorgânico, compreendendo as etapas de (i) misturar mecanicamente uma pasta fluida compreendendo (a) 100 partes por peso do alimento contendo fitato; (b) 60-1000 partes por peso de uma mistura de solvente que compreende água e um solvente orgânico imiscível em água, tendo um ponto de ebulição de 20-100°C, o solvente orgânico imiscível em água constituindo 20-85% por peso da mistura de solvente; e (c) uma fitase; e (ii) secar o alimento para remoção do solvente orgânico. O processo apresenta a vantagem de possibilitar uma alta taxa de conversão do fitato em fosfato inorgânico, de uma maneira econômica.
