O processo compreende a preparação de um meio, que compreende um anti-oxidante e pelo menos um outro componente. O processo compreende a preparação in situ no meio do anti-oxidante. O anti-oxidante é preparado ou a partir de uma glucana por técnicas de ADN recombinante e/ou por uso de uma glucana liase recombinante.
