A presente invenção é dirigida a processos eficientes de alto rendimento, para produzir ácido ascórbico, ácido 2-ceto-L-gulônico e ésteres de ácido 2-ceto-L-gulônico. Os processo compreendem a reação dos materiais de partida apropriados, com um catalisador de hidrolase enzimática, tal como uma protease, uma esterase, uma lipase ou uma amidase.
