A presente invenção refere-se a um processo de obterem-se hidrolisados de proteína, úteis como agentes aromatizantes. Mais especificamente, a invenção provê um processo de obtenção de um substrato protéico um hidrolisado enriquecido em ácido glutâmico livre e/ou resíduos de ácido glutâmico ligado por peptídeo, processo este compreendendo as etapas de submeter o substrato a um processo de desamidação e submeter o substrato à ação de uma enzima proteolítica de ação específica.
