PROCESSO DE FABRICAÇÃO DE UM PRODUTO PANIFICADO ASSADO CONTENDO SEMENTE DE LINHAÇA E IRRADIADO, PRODUTO PANIFICADO ASSADO E SEUS USOS. A presente invenção destina-se a um processo de fabricação de um produto panificado assado contendo semente de linhaça triturada e irradiado com Cobalto ^ 60^, produto panificado assado apresentando concentrações de 8 a 12% de semente de linhaça, preferencialmente, como pão de forma e/ou pão francês. Adicionalmente, o presente pedido trata do uso do produto panificado assado como alimento funcional, particularmente indicado para doenças coronarianas, combate aos radicais livres, controle de ganho e perda de peso, constipação, processos inflamatórios, entre outros.
