PROCESSO PARA A FABRICAÃÃO DE UM PRODUTO LÃCTEO FERMENTADO. A presente invenção refere-se a um processo para a fabricação de produtos lácteos fermentados, em especial, produtos lácteos batidos. A invenção diz respeito a um processos para a fabricação de um produto lácteo fermentado, sem querer etapa de resfriamento para parar a fermentação devido ao uso de uma cultura de bactéria láctico de pós-acidificação fraca como um acionador de partida.
