Abstract
GELIFICAÃÃO DE POLÃMERO DE ÃLEOS. Um oleogel comestÃvel que inclui um óleo, etilcelulose e um surfactante é preparado por meio da combinação de etilcelulose com um óleo comestÃvel e um surfactante, e o aquecimento da mistura a uma temperatura acima da temperatura de transição vÃtrea da etilcelulose. Assim que a etilcelulose é totalmente dissolvida e a solução fica clara, ela é resfriada e definida como um gel. O oleogel resultante é homogêneo, elástico, substancialmente anidro e possui temperatura de gelificação abaixo de 100ºC. Ele pode ser usado como uma gordura substituta em alimentos.
