Abstract
PRODUTO DE FIBRA COMESTÍVEL ENCAPSULADA, MÉTODO PARA PREPARAR O MESMO, E, PRODUTO ALIMENTÍCIO. A presente invenção geralmente refere-se a agentes encorpantes de baixa caloria (por exemplo celulose, amido, farelo, glucanos, hidrocolóides, e outros) revestidos com um composto de lipídeo para formar uma base ou camada interna e, a seguir, encapsular o complexo fibra! lipídeo dentro de um composto de proteína como uma camada externa. Com efeito, a presente invenção provê um sistema de distribuição para fibras comestíveis em que a absorção de umidade pelas fibras comestíveis pode ser controlada. Usando a fibra encapsulada desta invenção, a absorção de água pela fibra comestível (e assim o intumescimento da fibra comestível) pode ser eficazmente retardado até a fibra encapsulada alcançar o estômago e os processos digestivos normais começarem.
