Abstract
GOMA GELLAN DE ACILA ALTA ESTÁVEL EM CÁLCIO PARA ESTABILIDADE COLOIDAL REALÇADA EM BEBIDAS. A presente invenção refere-se a uma goma gellan de acua alta sensível em cálcio baixo (estável em cálcio) é preparada para a estabilidade coloidal realçada em bebidas. A goma gellan de acila alta sensível em cálcio baixo tem desempenho de suspensão superior para a estabilidade coloidal comparada a outras gomas gellan de arila alta. A goma gellan de acila alta sensível em cálcio baixo é preparada ajustando-se o pH de um caldo de fermentação de gellan (solução polimérica) antes da pasteurização e reduzindo o tempo de retenção da pasteurização comparado aos níveis de pH e tempos de retenção convencionais.
