PROCESSO ENZIMÁTICO PARA OBTER RENDIMENTO AUMENTADO DE ÁCIDO LACTOBIÔNICO. A presente invenção refere-se a um processo para obter produções aumentadas e/ou um tempo de reação reduzido em conversão enzimática de lactose em ácido lactobiônico compreendendo adicionar a um substrato lácteo, tal como leite, soro ou solução de lactose, um carboidrato oxidase, capaz de converter lactose em ácido lactobiônico, onde o processo é realizado sob controle estável de pH.
