Abstract
"PROCESSO DE REVESTIMENTO À BASE DE GELATINA". O fluxograma de produção de cenoura minimamente processada contém as etapas de seleção, corte, polimento e acabamento, lavagem e sanitização, enxágüe final, acondicionamento, armazenamento refrigerado. A presente invenção consiste em acrescentar, após o enxágüe final, as etapas de revestimento e secagem. A etapa de aplicação de revestimento comestível é realizada por meio da técnica de imersão em solução a base de gelatina e a secagem ocorre em esteira plástica perfurada, suspensa e submetido à ventilação forçada pelo período de 20 a 30 minutos.
