Abstract
"PROCESSO NATURAL DE DESIDRATAÇÃO DE VEGETAIS (E MAIS O OVO) POR ARRASTE TÉRMICO EM ESCALA INDUSTRIAL". É composto pelas etapas de lavagem, seleção, branqueamento, despolpa, pró-secagem, secagem em forno projetado, e moagem, sendo observado a necessidade de cada uma dessas fases para a devida conservação das características originais, como cor, sabor e aroma, enfatizando que em todo esse processo o consumo seja de energia elétrica ou, e, até mesmo de gás natural é extremamente baixo, o que em praticamente não onera o custo final do produto, mas, faz-se necessário verificar um controle rígido da temperatura que incide sobre o produto a ser beneficiado, que nunca exceda 60 C.
