Processo para extrair um composto ou composição de matéria a partir de uma matéria prima contendo este composto ou composição como uma parte constituinte é descrito. O processo compreende as etapas de (1) contatar a matéria prima com um solvente de extração compreendendo um pentafluoropropano de modo a extrair o composto ou composição da matéria prima no solvente e (2) separar o solvente contendo o composto ou composição extraído da matéria prima. O processo é particularmente adaptado para extrair flavorizantes e fragrâncias de materiais de origem de plantas.
