Abstract
COMPOSIÇÃO ANÁLOGA A LATICÍNIO. A invenção se refere a composições análogas a laticínios compreendendo de 1% a 90% em peso de uma composição de gordura; e até 99% em peso de água; em que a composição de gordura compreende uma mistura de (a) uma gordura vegetal láurica; e (b) uma mistura interesterificada de uma gordura láurica e gordura vegetal não láurica. Particularmente, a invenção se refere ao uso de certas composições de gordura em composições análogas de laticínios para melhorar várias propriedades das composições análogas de laticínios.
