Abstract

UM MÉTODO PARA PREPARAR UM PRODUTO PANIFICADO COM GORDURA REDUZIDA. A presente invenção se refere a métodos, usos e produtos para preparar um produto panificado compreendendo gordura reduzida. O método compreende os passos de a) preparar uma massa com uma ou mais lipases ou/e uma ou mais proteases, b) moldar e/ou folhear a massa e c) panificar a massa. O produto panificado é selecionado de um grupo consistindo em bolachas, biscoitos, e "crackers". O produto panificado tem pelo menos 10-25% p de gordura reduzida quando comparado com um produto panificado preparado sem a uma ou mais lipases ou/e uma ou mais proteases.
