Abstract
COMPOSIÇÃO AROMATIZANTE E ALIMENTO OU BEBIDA. A presente invenção se refere a uma técnica para mascarar um odor desagradável (off-flavor) gerado a partir de um alimento ou bebida. Uma modalidade da presente invenção fornece um agente de supressão de odor desagradável (off-flavor), uma composição de fragrância, um alimento ou bebida em que um odor desagradável (off-flavor) é mascarado, um método de produção do alimento ou bebida, e um método para mascarar um odor desagradável (off-flavor). A presente invenção torna possível suprimir um odor desagradável (off-flavor) de um alimento ou bebida usando, como ingrediente ativo, um ou mais selecionados do grupo consistindo em ácido oleico, Beta-damascenona, 4-metil-2-fenil-2-pentenal, 3-hidroxibutirato de mentila, butirato de dimetil benzil carbinol e 4-terc-butilfenilacetato de metila.
