Abstract
PROCESSO PARA PRODUZIR UM PRODUTO DE CACAU ESCURO, E, PRODUTO DE CACAU ESCURO. Um processo para produzir um produto de cacau escuro é descrito, compreendendo as etapas de (a) moer um material de cacau na presença de uma composição aquosa; e (b) recuperar um produto de cacau escuro que preferencialmente tem um valor L abaixo de 20 e/ou um valor de pH abaixo de 9,0. O produto de cacau escuro tem um valor "a" entre 0,5 e 10 e um valor "b" entre 0,5 e 10.
