É revelada uma composição de gordura compreendendo uma fase de gordura vegetal, em que a fase de gordura vegetal é livre de óleo de palma e/ou frações do mesmo e também está relacionada ao uso da composição de gordura. É revelado adicionalmente um produto de confeitaria ou chocolate ou tipo chocolate compreendendo a composição de gordura. Uma composição de gordura conforme revelada mostra a possibilidade de produzir compostos tipo chocolate sem o uso de uma fase de gordura vegetal à base de palma, sem comprometer a qualidade.
