Abstract
UMA COMPOSIÇÃO DE GORDURA NÃO TRANS COM ESTABILIDADE DE FLORAÇÃO, BRILHO E DERRETIMENTO MELHORADOS. É divulgada uma composição de gordura compreendendo diferentes triglicerídeos onde pelo menos 1% em peso são triglicerídeos MMM em comparação com o peso total de triglicerídeos. A invenção também está relacionada ao uso de uma composição de gordura não trans como um CBR e adicionalmente a usos da composição de gordura em diferentes aplicações. A composição de gordura é preferencialmente de origem não animal, por exemplo de origem vegetal, sintetizada quimicamente e/ou sintetizada por cultivo.
