MÉTODOS DE PURIFICAÇÃO DE PROTEÍNA EM PH ALCALINO. A presente invenção refere-se a métodos para purificar proteínas citoplasmáticas de células que compreendem paredes celulares, envolvendo tratamento em pH alcalino na faixa de 8,5 a 12,0. As céculas são perfuradas invés de lisadas, permitindo, portanto, boa separação dos fragmentos de parede celular. A perfuração pode envolver tratamento de exaustão alcalino, aquecimento a cerca de 60º C, uso de agentes redutores, tratamento mecânico e combinações dos mesmos. Os métodos resultam ainda em produtos de proteína com odores e aromas indesejados minimizados.
