Abstract
PROCESSO PARA REDUZIR A ATIVIDADE DE CONTAMINAÇÃO MICROBIANA EM UM MEIO DE LEVEDURA. A presente invenção fornece uma composição antimicrobiana, bem como um processo que utiliza a mesma para limitar a atividade microbiana em um meio de levedura. A composição antimicrobiana inclui, pelo menos, um ácido fraco, opcionalmente em combinação com uma bacteriocina estável a ácido e/ou um antibiótico. A composição antimicrobiana pode ser usada para propagação de leveduras e para fazer um produto de fermentação. A presente invenção também fornece leveduras e bactérias do ácido láctico que podem ser usadas com a composição antimicrobiana.
