COMPOSIÇÃO DE GORDURA TOLERANTE A MANTEIGA DE CACAU. É revelada uma composição de gordura compreendendo ácidos graxos saturados, triglicerídeos OStO simétricos e triglicerídeos Sat2O selecionados a partir de StStO, StOSt, POP, PPO, POSt, StPO e/ou PStO. A composição de gordura tem uma razão entre triglicerídeo dissaturado assimétrico e triglicerídeo dissaturado simétrico de pelo menos 0,7. É revelado adicionalmente um composto compreendendo tal composição de gordura e o uso de tal composição de gordura na fabricação de compostos e produtos semelhantes a chocolate, especialmente para consumo humano.
