COMPOSIÇÃO ALIMENTÍCIA EMULSIFICADA ÓLEO-EM-ÁGUA, PROCESSO PARA FABRICAR UMA COMPOSIÇÃO ALIMENTÍCIA EMULSIFICADA ÓLEO-EM-ÁGUA E USO DE UMA FONTE DE ÁCIDOS ORGÂNICOS EM UMA COMPOSIÇÃO ALIMENTÍCIA EMULSIFICADA ÓLEO-EM-ÁGUA.A presente invenção se refere a um produto alimentício emulsificado óleo-em-água compreendendo: água, ácido acético, ácidos orgânicos diferentes de ácidos acéticos, aminoácidos, compostos fenólicos, e óleo vegetal compreendendo 35 a 95% em peso de ácidos graxos C18:1 e 1 a 50% em peso de C18:2, com base no peso do óleo vegetal.
