Abstract
COMPOSIÇÕES DE GORDURA COMPREENDENDO TRIGLICERÍDEOS Sat2O.A presente invenção se refere a uma composição de gordura compreendendo triglicerídeos dos quais pelo menos 75% são do tipo Sat2O, e em que na composição de gordura:a) o teor de St2O é 30% ou menos da gordura total, eb) a razão (StOSt + StStO)/(POSt + PStO + StPO) é de pelo menos 0,95.A presente invenção também se refere a usos da composição de gordura e a um composto de cobertura, chocolate ou produto semelhante a chocolate compreendendo a composição de gordura de acordo com a presente invenção.
