Partícula de agente de volume revestida que compreende 2% em peso a 70% em peso de agente de volume e 30% em peso a 98% em peso de uma composição de revestimento que compreende açúcar e agente ativo na superfície; em que a razão entre açúcar e agente ativo na composição é de 2000:1 a 4:1 e 50% em peso a 100% em peso do açúcar encontram-se em forma cristalina; e o agente de volume é revestido com a composição de revestimento; partícula de agente de volume revestida e aglomerado; e processo de preparação das partículas e composição de confeito com base em gordura que compreende as partículas de agente de volume revestidas.
