Abstract
PRODUTOS ALIMENTÍCIOS AERADOS E SEUS PROCESSOS DE PREPARAÇÃO. A presente invenção refere-se a produtos alimentícios aerados. Os produtos alimentícios aerados compreendem entre 40%, em peso, e 95%, em peso, de ao menos uma pasta vegetal comestível, especialmente ao menos uma pasta de legumes/verduras, e têm um overrun na faixa de 7% a 150%. A pasta vegetal comestível não é uma composição em pó ou de particulado seco. A invenção se refere também a processos de preparação de tais produtos alimentícios aerados.
