Abstract
COMPOSIÇÕES DE CORANTES À BASE DE ANTOCIANINA E SEUS MÉTODOS DE USO.São fornecidas composições de corantes comestíveis contendo uma antocianina monoacilada do Composto I e métodos de uso. As composições de corante incluem pelo menos o corante antocianina monoacilada do Composto I extraído de repolho roxo e um íon metálico, e têm um pH de cerca de 6,0 a cerca de 8,0. As composições de corantes podem ser derivadas de um produto não artificial e fornecer um corante azul estável que pode ser usado em produtos alimentares. Especificamente, o corante de antocianina monoacilada fornece características de cor semelhantes àquelas fornecidas pelo corante azul artificial, Azul FD&C N° 1.
