Abstract
PRODUÇÃO DE SUCO DE VEGETAIS FERMENTADO LIVRE DE ÁLCOOL COM LEVEDURA DE PICHIA KLUYVERI. A invenção refere-se a métodos de preparação de suco de vegetais compreendendo a fermentação de um substrato vegetal com uma Pichia kluyveri. O suco de vegetais fermentado obtido de acordo com o método tem melhores perfis de sabor, em particular, sabores terrosos reduzidos. A invenção também fornece cepas de Pichia kluyveri úteis para fermentar substratos vegetais, que podem ser posteriormente processados para se obter bebidas ou outros produtos de consumo.
