PROCESSO PARA DEGOMAGEM ENZIMÁTICA DE ÓLEO.A presente invenção se refere a um processo para reduzir uma quantidade de fosfolipídios intactos em um óleo de triacilglicerídeo, o qual compreende incubar o óleo com um polipeptídeo que tem atividade de fosfolipase A1, em que o polipeptídeo compreende um polipeptídeo que tem pelo menos 80 % de identidade com a sequência de aminoácidos maduros da SEQ ID NO: 1.
