Abstract
A invenção se refere a um método para a produção de produtos alimentícios a partir de um iogurte, o método compreendendo uma etapa de aquecimento do iogurte em microondas a uma frequência entre 915 e 2375 MHz e a uma temperatura entre 60° C e 65° C por 10 a 15 segundos, uma etapa de drenagem do iogurte aquecido por microondas, uma etapa de prensagem do iogurte drenado e uma etapa de adição de pelo menos um ingrediente emulsificante e / ou estabilizante e / ou gelificante ao iogurte prensado.
