A invenção refere-se a emulsão óleo em água na qual óleos específicos (por exemplo, óleos láuricos) são usados na fase oleosa enquanto surpreendentemente mantêm excelente transparência. Em um aspecto, as ditas emulsões compreendem ácido graxo em fase oleosa. Em um pedido copendente separado, a invenção compreende um processo eficiente em energia para produzir o dito ácido graxo contendo nanoemulsões transparentes.
