Composição de confecção congelada que compreende de 0% em peso a 5% em peso de gordura, de 0% em peso a 10% em peso de proteína, uma proporção de gordura para proteína inferior a 1: 1 e um emulsificante; em que as gotículas de gordura da pré-mistura homogeneizada da confecção congelada possui um tamanho médio de gotícula d(3,2) abaixo de 0,6 mícron e uma contração significativamente reduzida do produto é observada no teste de choque térmico do produto de confecção congelada.
