Abstract
A presente invenção refere-se um método para produzir um material de cacau alcalinizado, compreendendo as etapas de: (a) mistura de um material de cacau com água e um agente alcalinizante; e (b) reação de uma mistura da etapa (a) a uma pressão de até 12 bar e a uma temperatura de 85 a 180°C, por 10 a 500 min; em que a etapa (b) é realizada e sob fluxo de ar contínuo.
